Cinnamon Coffee Cake

Ingredients
1 cup margarine
1 cup white sugar
2 eggs
1-3/4 cups flour
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 cup sour milk (1 cup milk + 1 tsp vinegar)
1 tsp vanilla
1/3 cup brown sugar
1 tsp cinnamon
Directions
- Preheat oven to 350F.
- Combine dry ingredients (flour, baking soda, baking powder, salt).
- Add vanilla to sour milk.
- Mix filling (brown sugar & cinnamon).
- Cream margarine and sugar.
- Beat in 2 eggs.
- Slowly add remaining ingredients alternating between dry ingredients mixture and sour milk mixture.
- Pour half of batter into a greased bundt pan.
- Sprinkle with half of filling.
- Pour in remaining batter and top with remaining filling.
- Bake at 350F for 45-50 minutes.
- Let cool for 15 minutes before turning out of pan.
Notes
- Drizzle with a simple icing if desired.
