Ingredients
2 cups new potatoes cut into chunks
1 cup carrots cut into chunks
1 cup corn (fresh or canned)
1 cup fresh shelled peas
2 cups fresh yellow/green beans cut into bite-size lengths
1 cup heavy cream
6 tbsp butter
1/2 cup water mixed with 1 tbsp flour
2 tbsp fresh dill (or 1 tbsp dry)
salt & pepper
thinly sliced chives or green onions
Directions
- Prepare veggies and place in a large pot. Fill with enough water to cover the veggies. Add 1/4 tsp salt.
- Bring to a boil then reduce heat and simmer for 10 minutes until veggies are tender.
- Drain.
- Add cream, butter, flour water, and dill.
- Season with salt & pepper to taste.
- Simmer until sauce reaches desired thickness.
- Top with thinly sliced chives or green onions to serve.
Notes
- Serve with fresh bread or biscuits!
