Traditional Nova Scotia Hodge Podge is a summer favourite!

Ingredients

  • 2 cups new potatoes cut into chunks

  • 1 cup carrots cut into chunks

  • 1 cup corn (fresh or canned)

  • 1 cup fresh shelled peas

  • 2 cups fresh yellow/green beans cut into bite-size lengths

  • 1 cup heavy cream

  • 6 tbsp butter

  • 1/2 cup water mixed with 1 tbsp flour

  • 2 tbsp fresh dill (or 1 tbsp dry)

  • salt & pepper

  • thinly sliced chives or green onions

Directions

  • Prepare veggies and place in a large pot. Fill with enough water to cover the veggies. Add 1/4 tsp salt.
  • Bring to a boil then reduce heat and simmer for 10 minutes until veggies are tender.
  • Drain.
  • Add cream, butter, flour water, and dill.
  • Season with salt & pepper to taste.
  • Simmer until sauce reaches desired thickness.
  • Top with thinly sliced chives or green onions to serve.

Notes

  • Serve with fresh bread or biscuits!
