Honey Maple Glazed Carrots

Ingredients
2 lbs carrots – peeled & sliced
2 tbsp olive oil
2 tbsp honey
2 tbsp maple syrup
sea salt & black pepper
1 tbsp sesame seeds
1/4 cup thinly sliced green onions or chives
Directions
- Preheat oven to 450F and line a baking sheet with parchment paper.
- Peel and slice carrots 1/4 inch thick.
- Toss carrots in olive oil, honey, and maple syrup.
- Place carrots in a single layer on baking sheet and sprinkle with freshly ground black pepper and sea salt.
- Roast at 450F for 15-25 minutes, stirring every 5 minutes, until tender and caramelized.
- Remove from oven and toss with extra maple syrup/salt/pepper to taste.
- Top with sesame seeds and chives/green onions to serve.
