Chewy Oatmeal Raisin Cookies

1.5 cups flour (spooned & leveled)
1.5 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1 cup (1/2lb) unsalted butter (room temperature)
1 cup packed brown sugar
1/4 cup granulated sugar
2 large eggs (room temperature)
1 tbsp vanilla extract
1 tbsp fancy molasses
3 cups rolled oats
1 cup raisins
Directions
- Soak raisins in water for 10 minutes.
- Whisk together flour, cinnamon, baking soda, salt. Set aside.
- Cream butter and both sugars using a mixer on medium speed.
- Add eggs and mix on high speed until combined.
- Add vanilla and molasses and mix on high speed until combined.
- Slowly add the dry ingredient mixture while mixing on low speed.
- Drain raisins and pat dry.
- Add raisins and oats to mixture and mix on low speed to combine. Dough will be thick and sticky.
- Chill dough in refrigerator for 30-60 minutes.
- Preheat oven to 350F. Line cookie sheet with silicon baking mats or parchment paper.
- Roll dough into balls (approx. 2tbsp each) and place on cookie sheet two inches apart. Makes approximately 36 cookies.
- Bake at 350F for 15 minutes until lightly browned on the sides. The cookies will still look sticky in the centre. Allow the cookies to cool on the cookie sheet for 5 minutes before transferring to a cooling rack.
Notes
- *Soaking raisins is optional but creates a better cookie texture.
