These Apple Banana Carrot muffin-like cookies are a kid-friendly snack for any time of day.

Ingredients

  • 2.5 cups whole wheat flour

  • 1 cup rolled oats

  • 1/2 tsp cinnamon

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 2 large eggs

  • 1/3 cup coconut oil – melted

  • 1/4 cup honey

  • 1 tsp vanilla extract

  • 1 cup grated carrot (approx. 2 med carrots)

  • 1 cup grated apple (approx. 1.5-2 apples)

  • 2 medium bananas (mashed)

Directions

  • Preheat oven to 350F. Line cookie sheet with parchment paper or silicone baking mat.
  • Whisk together dry ingredients (flour, oats, cinnamon, baking powder, baking soda).
  • In a separate bowl beat the eggs, then add the coconut oil, honey, and vanilla.
    Once combined add the wet mixture to the dry mixture and stir until well combined.
  • Add the carrot, apple, and banana and mix well.
  • Roll dough into 1-inch balls and place on the cookie sheet. Press down gently with a fork. Makes approximately 36 cookies.
  • Bake at 350F for approximately 15 minutes until set firmly and lightly browned on the bottom.
  • Allow to cool on cookie sheet for 5 minutes before moving to a cooling rack.
  • Store in an airtight container (store in freezer if storing for more than 3 days).

Notes

  • *Use a fine grater for carrots and medium grater for apples.
