minutesThese Apple Banana Carrot muffin-like cookies are a kid-friendly snack for any time of day.
Ingredients
2.5 cups whole wheat flour
1 cup rolled oats
1/2 tsp cinnamon
1/2 tsp baking powder
1/4 tsp baking soda
2 large eggs
1/3 cup coconut oil – melted
1/4 cup honey
1 tsp vanilla extract
1 cup grated carrot (approx. 2 med carrots)
1 cup grated apple (approx. 1.5-2 apples)
2 medium bananas (mashed)
Directions
- Preheat oven to 350F. Line cookie sheet with parchment paper or silicone baking mat.
- Whisk together dry ingredients (flour, oats, cinnamon, baking powder, baking soda).
- In a separate bowl beat the eggs, then add the coconut oil, honey, and vanilla.
Once combined add the wet mixture to the dry mixture and stir until well combined. - Add the carrot, apple, and banana and mix well.
- Roll dough into 1-inch balls and place on the cookie sheet. Press down gently with a fork. Makes approximately 36 cookies.
- Bake at 350F for approximately 15 minutes until set firmly and lightly browned on the bottom.
- Allow to cool on cookie sheet for 5 minutes before moving to a cooling rack.
- Store in an airtight container (store in freezer if storing for more than 3 days).
Notes
- *Use a fine grater for carrots and medium grater for apples.
